Description

A creamy, spicy coconut-based soup, served with caramelised mushroom, crisp broccolini, beansprouts and fried tofu. We have included two types of noodles – hokkien and rice noodles – for extra texture and flavour you will no doubt appreciate when slurping up this iconic dish.

Preparation

Step 1

Heat a drizzle of vegetable oil in a pot on medium, then add mushrooms and sear to caramelise.

Step 2

Pour laksa broth into pot and bring to boil, then reduce heat to low.

Step 3

Transfer hokkien and rice noodles, broccolini and tofu to the pot, then allow to heat through for 2 minutes or until hot.

Step 4

To assemble, pour noodles and broth into a bowl, then top with beansprouts. 

Step 5

Microwave instructions:


Transfer laksa to a microwave safe container, then microwave for 1.5 minutes. Remove from microwave then stir, and microwave for a further 1.5 minutes. Assemble in accordance with Step 4.
