Heat a drizzle of olive oil in a pan over medium heat..

Add ratatouille to the pan and add 1 tablespoon of water, then stir for 2 minutes.

Add pasta, then stir for 1.5 minutes or until heated through.

To serve, place pasta in the centre of the plate, add a dollop of soicotta, and sprinkle with pangrattato.

Transfer ratatouille and pasta to a microwave-safe container, then heat on high for 1.5 minutes. Stir, then heat on high for a further 1.5 minutes. Serve with soicotta and top with pangrattato.
