Casual, modest and easy to share. Everyone loves gathering around a table to assemble and devour a few tacos. Tacos have long been a staple of our weekly menu at home and we are constantly tweaking the recipe to introduce new flavours and seasonal produce wherever in the world we are. Our “V.2” taco combines grilled mixed mushrooms with a spicy mixed bean salsa, a sweet and tangy peperonata topped with a creamy jalapeno coconut yogurt. Served on a delicately soft tortilla, these are easy and fun to prepare and share.

Heat a drizzle of olive oil in a pan over medium heat.
Add mushrooms and peperonata to the pan, then stir for 2.5 minutes or until heated through. Transfer tortillas to a microwave-safe container, then heat on high for 0.5 minutes.
To serve, place mushrooms and peperonata in the centre of the tortilla, then top with salsa and coconut yoghurt.
