Deliciously soft mushroom gnocchi, served with silverbeet, leek and shiitake mushroom with a creamy corn sauce. Topped with fresh pine nuts.
Heat a drizzle of olive oil in a pan over medium heat. Sear gnocchi until golden.
Add vegetables to pan, then add 1 tablespoon of water. Sauté for 2 minutes or until heated through.
Remove from heat, add creamy corn, then stir for 1 minute.
To serve, place gnocchi onto a plate, then top with pine nuts.
Transfer gnocchi to a microwave-safe container, add 1 tablespoon of water, then heat on high for 1.5 minutes. Add vegetables and creamy corn. Stir, then heat on high for a further 1.5 minutes. Top with pine nuts.
