Perhaps our favourite variation yet packed with some of our favourite seasonal ingredients including chipotle jackfruit, fresh corn, black beans and a brown rice base. Drizzled with a tangy salsa verde. Perfect for a lunch on the go to deliver long lasting energy or a dinner to recharge.
Heat jackfruit in a pot or pan on medium heat for 3 minutes, or until heated through.
In a separate pan, heat corn and black beans on low heat and set aside with jackfruit.
Transfer brown rice to a microwave safe dish and heat in the microwave for 1 minute on high.
To assemble, place brown rice in the centre of the plate, add jackfruit and corn and black beans, then garnish with salsa verde.
Transfer jackfruit, corn, black beans and basmati rice to a microwave safe container, then microwave for 2.5 minutes. Garnish with salsa verde.
