Flavour-filled mushroom ragout with a zesty jalapeño and pine nut coriander pesto, fragrant mint basmati rice and fresh corn, black bean and capsicum salsa, and laced with a citrus pepper dressing.
Heat a pan over medium heat, add Bolognese ragout, then sauté for 2 minutes or until heated through.
Transfer rice to a microwave-safe container, then heat on high for 1 minute.
To serve, place rice onto a plate and add Bolognese ragout, then top with salsa and pesto.
