A deliciously creamy and aromatic massaman curry with tofu, potato capsicum, lentils and coconut milk, topped with crunchy fresh peanuts. Rich, comforting and packed with flavour. Everything you want in a massaman.
Heat a drizzle of vegetable oil in a pan over medium heat.
Add curry and peanuts to the pan, then sauté for 3 minutes or until heated through.
Transfer quinoa to a microwave-safe container, then heat on high for 0.5 minutes.
To serve, place quinoa onto a plate and top with curry.
