A Sichuan classic, Voodified. A fiery mapo tofu cooked in a rich, spicy and umami concoction of fermented bean paste, chilli oil and Sichuan peppercorns, served with tofu, spring onion, and steamed rice.
Heat a pan over medium heat.
Add mapo tofu to pan, then sauté for 2 minutes.
Transfer rice to a microwave-safe container, then heat on high for 1 minute.
To serve, place rice into a bowl and add mapo tofu.
Transfer mapo tofu to a microwave-safe container, then heat on high for 1.5 minutes. Add rice, then heat on high for a further 1 minutes.
