Description

Delicious sacrilege! The humble lasagna gets the Vood treatment. Ours is constructed using alternating layers of grilled eggplant and fresh pasta smothered with a rich and textural mushroom ragù, bio mozzarella and a creamy cauliflower cashew béchamel. A marriage of classic lasagne architecture with freshest of local produce that will win over the strictest pasta purists.

Preparation

Step 1

Allow lasagna to sit at room temperature for 10 minutes and preheat oven to 220°C.

Step 2

Transfer lasagna to a lined baking tray and place in the oven for 10 minutes or until heated through.

Step 3

While the lasagna cooks, heat a drizzle of olive oil in a pan over medium heat, then add greens. Sauté for 1.5 minutes or until heated through.

Step 4

To serve, place lasagna onto a plate, then add greens on the side.

Microwave

Transfer lasagna to a microwave-safe container, then heat on high for 2 minutes. Add greens, then heat on high for a further 1 minute.
