While not often associated with curries, some of the best we have ever had have been discovered on our travels through Japan. This is one of our favourites – a rich and flavour packed curry bursting with fresh vegetables and served with fragrant rice.
Heat a drizzle of vegetable oil in a pan over medium heat.
Add curry to the pan, then stir for 3 minutes or until heated through.
Transfer rice to a microwave-safe container, then heat on high for 1 minute.
To serve, place rice onto a plate and top with curry.
Transfer curry and rice to a microwave-safe container, then microwave on high for 1.5 minutes. Stir, then heat on high for a further 1 minute.
