Step 1

Heat a pan over medium heat, add eggplant, then sauté for 3 minutes or until heated through.

Step 2

Transfer rice to a microwave-safe container, then heat on high for 1 minute.

Step 3

To serve, place rice onto a plate and top with eggplant, then add cucumber raita and urkai on the side.

Microwave

Transfer eggplant to a microwave-safe container, then heat on high for 1.5 minute. Add rice, then heat on high for a further 1 minute. Serve with cucumber raita and urkai.
