The iconic (some would say infamous) Sichuan noodles. Traditionally intensely hot to combat Sichuan winter winds with ease, we tone it down a few shades to let the subtle flavours shine without losing the magic. Silky noodles dressed in a delicate chilli sauce.

Preparation
Heat a drizzle of vegetable oil in a pan over medium heat, then add mince and sauté for 2 minutes.

Add broccolini to the pan, then sauté for 1 minute.

Add noodles and peanuts to the pan, then sauté for a further 1 minute or until heated through.

To serve, place into a bowl.

Transfer mince and broccolini to a microwave-safe container, then heat on high for 1.5 minute. Add noodles and peanuts, then add 1 tablespoon of water. Stir, then heat on high for a further 1 minute.
