They said we couldn’t do it, but we have found a way to individually package comfort and emotional support in the form of this stew. A rich, aromatic stew brimming with chickpeas, barley, carrot, capsicum, and peas. Topped with fresh a dairy-free sour cream and a sharp cumin and mustard seed dressing, this will take smooth the edges of the hardest days and get you ready for the next.
Heat a drizzle of olive oil in a pan over medium heat.
Add stew to the pan, then stir for 3 minutes or until heated through.
To serve, place stew onto a plate and top with coconut sour cream and cumin and mustard seed dressing.
Transfer stew to a microwave-safe container, then heat on high for 1.5 minutes. Stir stew, then heat for a further 1 minute. Top with coconut sour cream and dressing.
