A deliciously smooth soup made with fresh cauliflower and yellow split peas with pickled vegetables and fried shallots for crunch.
Heat a pan on medium heat.
Add soup to the pan, then add a tablespoon of water, constantly stirring for 3 minutes.
To assemble, place soup in a bowl and add the pickled vegetables and fried shallots.
Transfer soup and mushrooms to a microwave safe container, then microwave for 2 minutes. Stir for 15 seconds, then microwave for 1.5 minutes. Assemble in accordance with Step 4.
