Contentious, we know. Prepare to have your strongly held gnocchi beliefs tested by our deliciously soft ‘brocc gnocc’ with creamy sauce of mushroom, leek, black beans and garlic, and a dusty of tangy cashew parmesan and slithered almonds.
Heat a drizzle of olive oil in a pan over medium heat. Sear gnocchi until golden.
Add mushrooms and black beans to pan, then add 1 tablespoon of water. Sauté for 2 minutes or until heated through.
Remove from heat, add sauce, then stir for 1 minute.
To serve, place gnocchi onto a plate, then top with cashew parmesan and slithered almonds.
Transfer gnocchi to a microwave-safe container, add 1 tablespoon of water, then heat on high for 1.5 minutes. Add mushroom, black beans and sauce. Stir, then heat on high for a further 1.5 minutes. Top with cashew parmesan and slithered almonds.
