Heat a drizzle of olive oil in a pan over medium heat, then add braised shiitake mushrooms and sauté for 2 minutes.

Transfer basmati rice to a microwave safe container and heat in the microwave for 1 minute on high.

To assemble, place braised shiitake mushrooms, ginger shallot salsa and basmati rice on a plate.
